Steamed Abalones with Dried Apricot Skin

Serving 4-5

  1. Fresh Abalones x 8
  2. Apricot skins x 2 pieces (soak in warm water for 20 minutes until soft)
  3. Spring onion x a handful (diced)


  1. Cooking oil x 2 tbsps
  2. Dark soya sauce x 2 tbsps
  3. Soya sauce x 2 tsps
  4. Sugar x 1 tsp
  1. Use a knife to scratch off the inner membrane of the soaked apricot skin. Shred and set aside
  2. Mix the dark soya sauce, soya sauce and sugar in a small bowl, set aside
  3. Use a toothbrush to clean thoroughly the abalones, and put them onto a steaming dish
  4. Prepare a wok with hot water at high heat. Then put the shredded dried apricot skin onto the abalones and put them to steam at high for 8 minutes.Take out the abalones, garnish with the diced spring onion
  5. At the same time, at high heat, prepare another frying pan. Add in the cooking oil until slightly smoky. Then pour the hot oil onto the spring onion. Then add in the soya sauce mixture into the wok which is still hot after the heating up the oil. The soya sauce mixture becomes aromatic and then pour onto the abalones. Serve warm.
