Tomato Soup

Serving 3-4

Ingredients:
  1. Tomato x 8 (about 900 g)
  2. Onion x ¼ piece (peeled and sliced)
  3. Chicken broth x 250 ml
  4. All-purpose flour x 2 tbsps
  5. Cooking oil x 2 tsps
  6. Unsalted butter x 15 g
  7. Salt x ½ tsp
  8. Sugar x 3 tsps
Directions:
  1. Wash tomatoes clean and dice
  2. Prepare a frying pan at medium-high heat, add in cooking oil until slightly smoky. Add in diced tomatoes and onion, sear and flip a few turns. Then add in chicken broth, mix well and turn to high heat until boiled. Then change to medium heat and simmer for 5 minutes. Then transfer the soup into a blender and blend until smooth. Transfer back to another saucepan for later use
  3. Prepare another frying pan at medium heat. Drop in butter until melted. Add in all-purpose flour and stir well. Add about one-third of the tomato puree into the flour mixture and stir well. Then transfer back to the rest of the tomato puree, at medium heat, and simmer. Add in salt and sugar to taste. Garnish by toast or dried herbs and serve warm
